We very nearly had a tower of loukoumades at our wedding and for the life of me, I don't know why we didn't. After looking at the wonderful pictures of Croquembouche cakes, I am still convinced it could be made with loukoumades and be incredible. Am so bleak I didn't have one, can you imagine how cool that would be. I am going to have a word with the patissier in Chania and see if she can rustle one up, just so we can see it in all it's glory! What an great choice for a wedding cake.
